Ingredients:
2 medium tomatoes, chopped
2 large navel oranges, peeled, segmented and coarsely chopped
100g spring onions, sliced
6 tablespoons chopped fresh coriander
2 teaspoons seeded jalapeno pepper (optional), finely chopped
55g tablespoons of Flora
6 salmon fillets (about 750g or 1 ½ lbs)
Preparation:
Combine tomatoes, oranges, spring onions, 4 tablespoons coriander and jalapeno pepper in a large bowl; set aside.
Blend Flora with remaining 2 tablespoons coriander in a small bowl.
Grill salmon, brushing with Flora and coriander spread for 15 minutes or until salmon is done.
Serve salsa with salmon.
